In many developing
countries around the world and in India, milk cans
play an essential role in transporting milk from various
productions / collection centers to the dairy or the
processing centers. Since these cans also act as storage
vessel by having raw milk in them for hours together,
they were found to be among the prime source of microbial
contamination to the milk, which has got direct implication
on the quality of processed milk and other end products
and further on the public health.
These facts call for proper research on the effects
of milk cans on microbial quality of milk kept in
them. A study, hence conducted on two major types
of materials used for milk cans, Aluminum alloy and
Stainless Steel, with reference to cleaning and sanitation
efficiency gave some alarming results.
